Venison supplier wins major pub contract
Scottish venison specialist Highland Game has secured a major contract with the London pub group Young’s.
The Dundee company has signed a 12-month contract to supply 120 pubs across the group with cuts of Scottish wild venison. The pubs will serve a range of venison dishes, such as venison stroganoff, venison medallions with melting onions and venison and cranberry sausages.
Young’s initially introduced venison to its pub menus as part of British Food Fortnight in September, but the dishes proved so popular that the chain decided to make venison a permanent fixture on its menu.
Christian Nissen, managing director and owner of Highland Game, said: “We invited members of Young’s to visit our premises during Scottish Food Fortnight and, following on from this visit, we were asked to supply venison for their British Food Fortnight menu. However, since then, we have been offered another contract with Young’s, which is just fantastic news for Highland Game. To supply a large chain of this size south of the border is quite an achievement.”
Highland Game was founded by Danish-born Christian Nissen in 1997 and has become the key supplier of venison throughout the UK. The company currently supplies quality assured premium Scottish wild venison to over 556 stores, including all major supermarket chains across the UK such as Morrisons, Asda, Tesco and Waitrose, as well as distributors to the restaurant and catering industry and quality butchers.
