Butcher's new kit
Master butcher and manager Martin Blackwell of Blackwell Butchers, Norton, near Stockton-on-Tees, talks about the changes in his shop this year, which has helped his pie production.
"Last April, I bought a new oven, a new pastry mixer and a pastry roller. We had to lift the oven with a crane through the roof. It is a Tom Chandley five-deck oven, which makes 300 pies. It's a fantastic buy. I wish I had done it sooner.
"I then bought a Thompson mixer and I don't know how I ever did without it. It's like having an extra man in the shop. "The oven cost £15,000, the dough mixer cost £3,000 and the pastry mixer £1,000."
Tom Chandley Bakery Engineers is a supplier of commercial bakery equipment in the UK, with almost 60 years of manufacturing experience. The company has a purpose-built factory in Denton, near Manchester, where it supplies a range of commercial baking ovens and bakery equipment.
Thompson Meat Machinery is an Australian firm specialising in mixers and grinders. It was initially formed to service butchers' machinery and supply and sharpen bandsaw blades, but has expanded to become a major manufacturer and supplier of meat processing machines, supplying many major companies.
