Young butchers show off their skills at RHS
The talents of four young butchers were showcased at the Royal Highland Show last month.
The butchers each took a day to demonstrate their craft skills on the QMS stand, breaking down a carcase into a range of different products in front of the audience.
This year lamb was featured, and the demonstration focused on the contrasts between traditional lamb products such as steaks and chops, as against new butchery techniques which produce more innovative products such as lamb mini joints, lamb koftas and stir-fries.
The young butcher's taking part included Gary Raeburn, from Forbes Raeburn & Sons in Huntly, John Harvey from Hugh Black & Sons, Kirsty Moore from Scott Brothers in Dundee (Saturday), and Alan Elliott of Dalbeattie Fine Foods.
Douglas Scott, chief executive of the Scottish Federation of Meat Traders Association, who provided commentary during the event, said: "The butchery demonstrations prove a fascinating and informative session for consumers who want to know more about meat and are keen to try new products. Sometimes these demonstrations attracted as many as the cookery demos!" The products were then used in cookery demonstrations by celebrity chefs, including Lady Claire Macdonald, foodwriter for The Scotsman and Hardeep Singh Kohli from the BBC's The One Show.
