Handmade fudge melds salt with sweetness

Original Crumbly Fudge from Burnt Sugar uses Fairtrade unrefined sugar from a West Kenyan co-operative as its main ingredient.

The company owner started the business using his mother's fudge recipe, initially selling it on Borough Market in London.

All the fudge is made by hand and, by using unrefined sugar rather than white sugar, all the chemicals such as sulphur dioxide are removed and so the naturally brown colour and caramel flavour from the sugar cane juice is retained, said the company.

Burnt Sugar also likes to experiment with unusual flavours, such as using a little bit of sea salt in its fudge to balance the sweetness. As well as fudge, the company sells nougat, caramels and toffees.
