Wild boar salami wins Morrisons award
British boar farmer Simon Gaskell has won the Cut Above Meat Quality Award for his Wild Boar Salami.
Gaskell received the award, which is sponsored by Morrisons Supermarkets, from Wilfred Emmanuel Jones – The Black Farmer – and Richard Taylor, director of corporate affairs at Morrisons.
The judges – food specialists at Morrisons – were impressed by the “great appearance and rich aroma” of the salami, commenting on the red wine and spices, which added a “real depth and richness of flavour”.
Most of all, however, they were impressed by the uniqueness of the product, and said that while using wild boar in salami is not uncommon, the fact the animals were farmed in Britain “shows great innovation”
Commenting on his win, Gaskell said: “This is the second award that our Wild Boar Salami has won and we are absolutely thrilled.”
The Wild Boar Company has just launched new ‘Cotswold Game’ salami, which is a mix of wild boar, local venison and pheasant with a hint of port. The product was tasted by food buyers and the public at the Real Food Festival, and Gaskell said it was a “resounding success”.
The new salami will be available by late autumn, after the opening of the shooting season and in time for Christmas.
