Chester butcher scores awards hat-trick

Butcher David Joinson has won his third best sausage award in a row at this year’s Chester Food & Drink Festival picking up the award at a gala dinner.

David, who works at Chester market, has now been champion for three years and secured the title in front of a packed audience at the Taste Festival with his pork and apple sausage, following on from his pork and blue Cheshire cheese sausage last year and his pork and leek winner in 2007.
David said: “There is a lot of competition in the shop to make next year’s sausage. It was difficult to get the apple content right for the winner this year. We’ve already started planning for next year. Sausage sales have increased by 70% thanks to winning the Best Sausage at the Chester Food and Drink Festival. I would encourage everyone to buy locally. There are some great businesses in Chester market, with almost all of the products sourced locally.”
Bruce Edge, of Ernest W Edge & Son Butchers in Handbridge, was judged second, with his traditional Cheshire pork sausage and Chris Austin, of Austin’s Butchers, Northgate Street, Chester, came third with his ‘Chester sausage’, which is made within the city walls and consists of Cheshire pork, parsley, herbs and crushed walnuts.
Judge Nick Birchall said: “Here in Chester we should be really proud of the fact we have some excellent sausage providers. All the sausage makers have stressed the local food miles. The less the animal has to travel, the better it will taste, so please support your local suppliers. I don’t think we’ve ever had such a large audience for this competition. This year we were amazed by the quality and quantity of sausages. The judges were also amazed by the talent of the sausage makers.”
