Great British Turkey

Bernard Matthews Food Service has created a special turkey recipe in celebration of the British Food Fortnight, which runs from 22 September to 7 October.

The event is sponsored by the British Turkey Federation and aims to encourage healthy eating using recipes focused on British ingredients.

Bernard Matthews developed the dish - Free range British turkey medallions with red wine jus - to help caterers celebrate the 'Best of British' during the fortnight.

Made with turkey fillets on a bed of savoy cabbage with lardons of bacon, juniper berries and walnuts with a red wine jus, the recipe combines a range of British ingredients and takes advantage of the increasing awareness about the health benefits of turkey, which is low in fat and high in protein and vitamins.
