One of three brothers and business partners in family-owned Scottish processors, Mitchells Chickens, Mike Mitchell, talks about his fondness for home-cooked steak

"Being based in Angus, I am surrounded by top quality butchers and, as such, am fussy about my meat.

"My favourite steak is from Highland Cattle from my father's Highland fold, slaughtered at St. Andrews abattoir and hung at our local butcher's for our own consumption.

"I have a wife who is a great cook and she cooks Highland rib-eye steak on a very old griddle pan, medium rare with home made chips,baby tomatoes and a little of her home-made peppercorn sauce. Bliss."
