Peter Bradnock, chief executive of the British Poultry Council, talks about one of his favourite meals

- steak - and revisits the 1990s to reminisce about one particular turkey steak he ate in a well-known restaurant.

Holidaying in Florence this summer, my wife and I shared a very large, very thick Bistecca alla Fiorentina. It was delicious. But the most memorable steak for me was the two-inch thick, beautifully cooked and slightly rare, yes rare and juicy, turkey steak served at a lunch for food writers in a private dining room at Le Gavroche in the early nineties. It was so unexpected and just superb. It would be a winner on the best menus today.
