Beef guide on CD

The definitive guide to beef for the catering trade has been produced on CD-ROM exclusively for members of the English Beef and Lamb Executive (EBLEX)'s Quality Standard scheme.

Entitled "Beef...What makes Quality Standard beef a hero?" the CD contains easy-to-navigate sections on regional beef breeds and specification advice, as well as guidelines on how to cook the perfect steak - and a whole host of delicious beef recipes.

Hugh Judd, foodservice project manager and EBLEX, said: "We...developed the CD as a one-stop source of information on the beef industry for our Quality Standard scheme members. Many caterers may not be aware of the various beef breeds that exist today. We hope that the CD will be a useful training tool for staff."
