Insight into Australian trade
Scottish processors, butchers and wholesalers are being offered the opportunity to hear from a leading innovator in the Australian meat sector.
Rod Polkinghorne is one of Australia's leading experts in beef eating quality and was responsible for the management of research and development at Meat Standards Australia since its inception.
He will be in Scotland on 21 August and will be taking part in a special conference organised by QMS. He will discuss the consumer trends in Australia which prompted the industry to look more closely at eating quality and conduct taste trials to establish exactly what they wanted.
Polkinghorne will also focus on the cutting and boning techniques he uses in his own business and how he handles his retail operatons. The conference takes place at the John Player Building, Stirling Enterprise Park, from 9.30am to 12.30pm.
