Future food industry flavours revealed

Indian flavours are set to be the biggest trend in food ingredients this year, with Mediterranean and regional Asian influences playing a role too, according to a new report from American market research company Packaged Facts.

Food Flavours and Ingredients Outlook 2007 tracks emerging trends in foodservice and retail and finds that as well as spicy Indian flavours, ingredients with energy boosting properties will also be popular, as will new food textures and aromas.

Other factors influencing flavour and ingredients that are analysed include food fears stemming from E. coli outbreaks; food politics such as cloning and childhood obesity; and new food technologies such as food nanotechnology.

Tatjana Meerman, managing editor of Packaged Facts, said: "We're seeing new takes on comfort foods, a wave of Mediterranean and Asian influences, increased popularity of international and speciality cheeses and yogurts, and ever closer scrutiny and abandonment of 'demonized' ingredients such as salt and high fructose corn syrup."

Now in its fourth year, Food Favours and Ingredients Outlook 2007 provides an insight into ingredients and flavour trends, cooking styles, and technological influences, that will make their mark in home and restaurant kitchens this year.
