TMI capitalising on Britain's love affair with Bacon
The British Sandwich Association estimates the UK sandwich market to be worth £3.5bn with sales rising 8% each year.
Bacon, which features in three of Britain's top 10 favourtie sandwich fillings, is growing strongly and is fast becoming a popular item in salads, pizzas, snacks and other convenience meals.
Northampton-based TMI foods, a leading UK supplier of cooked bacon to sandwich and food manufaturers, has been at the centre of a new product development in the category. It has responded to government directives to lower the salt content of foods and has worked with customers to meet demand for products with lower fat content, placing it at the forefront of its developmental work for manufacturers. "You have to reain a certain amount of the sakt and preservatives for it to be proper bacon, but we are able to provide a wide range of distinctive tastes through our precision curing techniques," says managing director David Abbot.
"We have invested heavily at our Coventry curing plant, installing the latest smoke ovens to use natural smoking techniques and cure for a variety of new flavours including traditional dry cure and maple," he said.
TMI Foods produces more than 10m rashers of bacon weekly - enough for 1.6m sandwiches - and supplies the foodservice sector as well as food manufacturers and the convenience sector
