The Country Butcher wins BPEX sausage competition
The Country Butcher, in Huntley, Cambridgeshire, has won the BPEX Foodservice Sausage of the Year Competition.
David Tomlins, proprietor of The Country Butcher, in Huntley, Cambridgeshire, has won the BPEX Foodservice Sausage of the Year Competition.
His entry a low salt pork sausage went head-to-head with 14 others in the finals with categories including the traditional pork sausage and speciality pork sausage.
To be eligible Tomlins had to cut the salt content of an existing pork sausage by 25%. His inspiration he said was his father who was advised by his doctor to reduce his salt intake after suffering from deep vein thrombosis (DVT).
He worked on the recipe which got the thumbs up from one or two doctors who were his customers, for a year. "The most difficult part was getting the taste right. But we have shown it can be done."
The low salt content sausage is aimed at health centres and old people's home Tomlins supplies.
Richard Fagan, BPEX foodservice development manager, said the competition was very close and congratulated the 14 other entries on getting through to the final. "There were 300 entries for this competition this year, a hundred more than the previous year."
