Gloucestershire duo strikes it lucky

A Gloucestershire butcher has walked off with three accolades in the BPEX Foodservice Sausage of the Year 2006 competition.

David and Elaine Tomlins, owners of The Country Butcher in Huntley, Gloucester, won the overall award, and won first and second place in the category Best Reduced Fat/Reduced Salt Pork Sausage.

They won the overall award in the annual competition which is open to butchers and caterers across the country with their reduced-salt sausage. The recipe was developed over a year after a family member was advised by a doctor to cut their salt intake and the David now intends to market it to health clubs.

David said: "We used an original sausage recipe and reduced the salt content by at least 25%. We then had to experiment with different spices to make sure it tasted as good as any other sausage. It was a difficult process."

BPEX foodservice development manager, Richard Fagan, said: "The winning sausage proves reduced fat and salt don't mean reduced taste. With health very much in the public eye this is an important concern for the industry."
