Tastes of Anglia push pork profile

Regional food group Tastes of Anglia (TOA) has organised a seminar for pork producers, processors and retailers to raise the profile of pork products in the east of England.

The 'Profit from Pork' seminar is being funded by the British Pig Executive (BPEX) and will be held on 8 March at Chilford Hall in Linton as part of food festival Feast East.

Hosted by TOA chairman, John Cousins, the seminar will encourage retailers to add value to their pork and create innovative new products.

Chef Franck Pontais will work alongside master butcher Viv Harvey to introduce new recipe ideas such as stuffed collar of pork with wild rocket and grain mustard.

Over 40% of the nation's pork is produced in the east and the seminar will update everyone with how easy it is to research the domestic market.

Paul Mayfield of the Food Chain Centre has access to the Dunnhumby data which comprises all the Tesco club card information. He will be showing how to make reasoned investments rather than guessing market potential.

The growing market for premium bacon will also be discussed as well as the theory that pig husbandry is important for boosting pork flavour.
