Prince's party order for butcher's ham

 - Published:  19 March, 2007

The Prince of Wales has given his approval to a butcher's treasured ham recipe, by ordering 200 slices for a party.

Chris Rees of Albert Rees butcher's shop in Carmarthen produces air-dried hams to a recipe dating back five generations.

Clarence House phoned last week to order the ham, which will be used for a private function when Prince Charles visits his house in Carmarthenshire this week.

But this is not the first time the prince has eaten Carmarthen ham - Chris's father Albert presented the prince with some in the 1980s.

"My Dad gave him a whole Carmarthen ham 20 or 25 years ago. When I met him again in a garden party in Pembroke castle about 10 years ago and he noticed the logo on my tie and asked how my Dad was. He's got a fantastic memory," said Chris.

Family legend has it that parma ham is based on the Rees family recipe: "The Romans did settle in Camarthen, maybe they took our hams home back to Rome and developed parma ham," said Chris.
