Sausage Competition At International Fair

The German Butchers' Association (DFV) is holding its first sausage competition to be staged at the upcoming IFFA exhibition in Frankfurt which will judge handmade products from Germany and abroad.

The 'Grand Prize for the Best Sausages' competition will be open to all types of grilled, boiled, raw and cooked sausages with the exception of raw minced meat products which have not been smoked, cured or preserved in some other manner.

"Sausages play a tremendously important role in the European butchers trade," competition manager, Dr Wolfgang Lutz said.

"They are the classic meat product, with a tradition that reaches back to antiquity. There are an endless number of varieties available, and their production by hand requires a great deal of skill and experience," he added.

The product samples submitted will be evaluated on their external characteristics, appearance, colour, composition, consistency, odour and taste.
