Wales' young get a chance to shine

The best young butchers in Wales are being given the chance to shine as part of a new contest at this year's Royal Welsh Winter Fair in Builth Wells this month.

The inaugural Creative Skills Welsh Young Butcher competition is being organised and sponsored by the Cambrian Training Company.

The contest is being linked to the launch of Welsh chevon, goat meat, in the UK.

Launched to the trade on the True Taste stand at the recent Restaurant Show in London, Welsh chevon will have its consumer launch at the BBC Good Food Show at the NEC, Birmingham from 22-26 November and will be available at the Royal Welsh Winter Fair on 27 and 28 November.

Young butchers, who were under the age of 23 on 1 January 2006, will be tasked with cutting up and presenting a range of consumer cuts from an average 10kg goat carcase.

Four finalists will be competing on Tuesday, 28 November at the rear of the Carcass Hall on the Royal Welsh Showground, with the winner claiming £200 in prize money, the runner up £100 and the remaining two £50 and £25 respectively.

Arwyn Watkins, Cambrian Training Company's managing director, said: "There is currently no international cutting specification for chevon and the aim of this creative skills competition will be to establish criteria that can be taken forward when training future butchers in cutting techniques."
