Mutton gets Royal seal of approval

A NEW 24-page supply chain information booklet, A Taste for Marketing Mutton, has been published by Mutton Renaissance in partnership with Defra.
The guide for producers, processors, butchers and chefs contains case studies, recipes and advice on ?nishing and pricing, and comes in response to the growing muton market.
The Mutton Renaissance Club's ?rst patron is The Prince of Wales.
