Geese enjoy wet weather

With reports that some regions of the country have recorded rain levels three times over the average for this time of the year, geese reared for Michaelmas and Christmas are said to be enjoying the milder summer, longer grass and the extra water to swim in.

British Goose Producers chairwoman Judy Goodman said: "There's certainly been no question of the geese suffering heat stress this summer."

The quality of goose being produced this year has resulted in a surge in demand for the bird for the traditional Michaelmas season and pubs and restaurants are increasing orders this year.

Dorset pub owner Emily Hammick said: "We slow roast the legs to make a confit, then flash cook the breast to serve it pink. Goose does terribly well this way."

Hammick, who runs the Gaggle of Geese pub in Buckland Newton with husband Mark, has ordered her geese from local farmer Michael Coleman who is rearing 60 geese for Michaelmas and 500 for Christmas.
