BPEX offers helping hand
BPEX has released information sheets advising on ageing and chilling methods to improve pork eating quality.
Part of BPEX's Target Pork Quality series, the two fact sheets give advice on ageing, post-slaughter treatment, packaging, chilling systems and electrical stimulation.
BPEX pig industry development director Mark Wilson said: "The guides are aimed at all processing businesses from the large-scale to the smaller specialist farm shops. We hope they give sensible, practical advice to see fantastic eating quality and highest-value pork produced consistently to keep the consumer coming back for more."
