Trunet's net effect
Trunet has launched the Total CONTROL Net, said to combine the control of a casing with the power of netting for the first time to produce a calibre-stable netted product.
The new netting is said to have a prefixed maximum extension, which makes it extremely strong and suitable for portion control as the product maintains its size along almost its whole length.
Trunet MD Stuart Revill said: "Netting has been used for years to compress meat during cooking to stop cavities. Up to now this always produced a balloon-shaped product great for joints but not for portion control products. Now, Total CONTROL Net helps meat processors produce a calibre-stable, fixed-diameter product. In combination with casings, the net ensures emulsions are always compressed, helps prevent burst casing due to over-filling and helps produce an even cook-out.
"The patented product is already on sale in other European markets where extensive testing continues."
