Firm aims to push classes on butchery

Independent butchers are being encouraged to offer butchery classes in the evenings and weekends by a new company, which will promote the classes and act as an agent.

Marion Grant has set up the company, Butchery Classes, which provides local advertising, posters and a website to promote the classes. She said there was a big opportunity to appeal to customers interested in the provenance of food and curious about butchery. "There is a market there among people interested in cooking and the classes will help to drive people back to the high street," she said.

Butchery Classes has so far signed up two butchers in London, Moen & Sons in Clapham and Hennesey's in Battersea, but is able to take on butchers around the country.

Butchers who sign up will host the classes for between 10 and 12 people, and provide a cut of meat for them to take home at the end of the class. Grant said butchers should provide at least two pigs, two sheep or two hindquarters and demonstrate how they are broken down into different cuts. The classes are designed to be two-and-a-half hours long and cost £95 per person. Butchery Classes will take a 30% cut of the fee, and will handle all enquiries and bookings over the phone or through its website www.butcheryclasses.com.
