Young Butcher Talk

I really enjoy the trade, as you never know what new challenges tomorrow will bring. I find it really rewarding even more so as most of what is sold in the shop comes from my family farm. I find no greater pleasure than handing a customer a product, knowing that it has full traceability.

In December, I gained the title Welsh Young Butcher of the Year and winning the title has opened up new opportunities, as I have been asked to do promotional displays for different firms at trade exhibitions.

I thoroughly enjoy all aspects of the butchery, learning about the different cuts across all types of poultry, pork, lamb and beef. I'm also learning about all the health & safety and hygiene regulations that come with the trade; I'm beginning to learn that butchery is not just about meat.

I am now looking forward to helping compete, along with Clinton and Angela, at the South Wales Meat Awards, to keep up our reputation as one of the top butcher's shops in Wales.

People always ask what I enjoy doing the most and my answer is 'everything', although making sausage and faggots is the most enjoyable. In future, I hope to have my own shop and to be able to call myself a master butcher.
