Quality Meat Scotland launches butcher masterclass

Quality Meat Scotland (QMS) has launched video clips of a master butcher at work as part of its new ‘Cutting Edge’ website.

The new masterclass features over four hours of butcher Viv Harvey breaking down beef, lamb and pork carcases. Harvey shows how to maximise the value of each part of the animal.

The teaching tool is likely to appeal to butcher and retail sectors, although farmers looking to diversify into butchery through farmers’ markets and farm shops may find it useful for developing their cutting skills.

QMS Industry Development Manager, Andy McGowan, said: “The independent butcher sector recognises the need to attract new blood into the industry and to make sure that these apprentices go on to develop the skills and knowledge that are required. Training initiatives like the Cutting Edge go some way to making this happen.”

The updated QMS website also features economic reports, a new animal health section and advice and reports from members of the QMS team.
