Processors and meat manufacturers are largely responsible for turning carcases and basic cuts of meat into added value products and, increasingly, retail ready products including the incredibly wide array of popular ready meals sold in the UK. These companies vary greatly in size from the very large to the tiny, specialist processor. In total about 1,500 firms operate in this sector in the UK.
